How does Tails maintain his sanity, considering all the weirdness the comm and his world puts him though.

That's a good question, even Tails himself questions why he hasn't gone insane yet by the community. I have a feeling if the Timey-Wimey Leaky virus wins, he will either snap or be on the verge of going bat-shit crazy. I know he will be very upset in that virus since he'll think he's supposed to be a female human witch that helps Sailor Rain (Aqua) fight evil. XD

As for why he can take the weirdness his world goes through, it's because he's used to it (He's been fighting Eggman since he was six years old!) He is starting to get tired of dealing with Eggman and resent the fact that he only sees his canon friends once a year (we don't know if he hangs out with them in-between games so I assume he gets pretty lonely during those times).
